Our master roaster, Dax has the passion and patience to meticulously roast our coffee beans in small batches to lock in the natural aromas and flavors. He is the guy loading in the green beans by hand into his Ambex roaster. He carefully watches over the process. Our traditional small batch roasting style captures the peak characteristics, individual subtleties & full aromatic pleasures unique to each variety of specialty coffee.

Fair Trade Organic Guatemala Huehuetenango SHB EP Pronounced "way-way-ten-an-go", an exciting name for a lively coffee! Shade grown, organic and Fair Trade.  This limited-release coffee is grown high in the mountains of Western Guatemala, in a part of the Huehuetenango Department (state) that enjoys volcanic soil and ample rainfall necessary for premium organic coffee cultivation. This delightful new crop arrival is bright and well-balanced with a buttery caramel aroma together with subtle notes of  dark chocolate, cherry, jasmine blossoms and fig preserves.  Most members of the Fair Trade cooperative that produces this coffee are indigenous Mayan and the group is spread over dozens of small villages surrounded by the Cuchumatanes Mountains and the Maxbal forest reserve. Cooperative members follow organic production methods that produce superb coffee, including weeding four times a year, building natural terraces, and using compost created from coffee cherry waste. With the additional funds obtained from Fair Trade sales, the co-op has developed programs to promote literacy, diversify crops and income, support sustainable agriculture, invest in quality control and support emergency healthcare.

This coffee is very popular and sells out quickly, thus we may have purchase limitations in place from time to time so we can fill reasonably sized orders for most of the year.
 
Indian Monsooned Malabar AA Shade Grown and Bird Friendly Potent, pungent and wild.  Great for those who like strong, deep flavors. This coffee is actually exposed to monsoon winds which enhance the flavor! Extremely low acidity, incredibly rich and smooth with a spicy, woody flavor.The "monsooning" process entails spreading unwashed coffee beans in layers 4 to 6 inches thick then exposing them to moisture laden monsoon winds. This is done by laying the coffee beans in open walled warehouses so the wind can reach the beans. The roof remains on the warehouse which prevents them actually getting wet. During this 12 to 16 week process, the beans will swell up to nearly double their original size. The color also changes to a pale white or light golden, acidity is almost completely removed, and the unique, pleasant flavor develops. Nearly all the coffee grown in southern India is Shade Grown. This is due to the higher temperatures found near the equator. Coffee plants here only require about 4 hours of sunlight each day. This canopy of shade is what allows the coffee trees to survive. Additionally, these shade trees provide a sanctuary for birds and enhance the quality of natural organic matter introduced to the soil from falling leaves. This decomposed organic matter enriches the soil, conserves moisture, and reduces the need for chemical fertilizers. Shade trees also control the growth of weeds on the estates and reduce the incidence of insects, pests, and leaf disease.
 
Sumatra Mandheling Harimau Tiger A truly rich and full-bodied coffee, Sumatra Harimau Tiger also presents an intense, bright aroma. Its acidity is distinct yet mellow. This coffee finishes sweet with a lingering richness.Small land owners whose tiny plots are scattered over high terraced plateaus of clay produce most of the coffee in Sumatra. The coffee grows under full sun conditions without the addition of chemical fertilizers or pest control. The area farmers are responsible for the initial stages of the coffee bean processing. The farmers remove the skin of the coffee cherries with hand-operated backyard milling machines and ferment the pulp covered beans overnight. The beans are then hand washed in the morning and allowed to dry on clay or canvas in the farmers’ yards. Parchment removal and a second drying are done at a middleman’s warehouse. A third drying and sorting is done at the port of Medan before shipping. The combination of soil, climate, and primitive processing methods (variation in bean size and color are normal) are responsible for, and contribute to, Sumatran coffees being named one of the truly unique coffees in the world.
 
Colombia Supremo Popayan is an excellent coffee that is reflective of the best that Colombia produces. It's a little sweet but with a little fruitiness & bitter sweet cocoa qualities as it cools in the cup. Very balanced with moderate acidity. An exceptionally smooth cup, the depth of flavor is superb - standing up to any roasting profile. Recommended at City+. But fantastic at Full City & Vienna as well.
 
Guatemala Antigua SHB EP Guatemalan coffees are revered as some of the most flavorful and nuanced coffees in the world. Strictly hard bean, European processed, or SHB EP coffee is an elegant cup: The fragrance very sweet! It is floral and fruited shifting to a mildly chocolate aromatic base with sugar cane sweetness. Cup flavors are very mild and the aftertaste is rather lingering, the appeal of this cup is its fine aromatics, and delicate, clean personality. The body is light but has a creamy texture. This is the classic, clean, Central American cup, refined, fragile, and seductive. Don't expect flavors to leap out, rather, this is a coffee you can savour.
Recommended City to Full City+.  City roasts have tannic fruit, floral aroma, malty roast flavors. FC roasts have chocolate, raisin, concord grape, floral notes, spice.

At a medium roast it reveals rich notes of chocolate and spice, with a natural sweetness that adds balance to this exceptional coffee. City+ - Full City+
 
Organic El Salvador Finca Monterey Bourbon Peaberry Rainforest Alliance certified- The Monterey Estate has been in the Batres-Bendix family for three generations. It is approximately 56 hectacres and is comprised of 100% bourbon trees surrounded by forest. This farm has been certified organic and certified by Rainforest Alliance since 2006. Balanced, long finish, good acidity. Cupping notes: City+ Sweet, citrus, bright, fruit acidity, clean. Full City Citrus, fruit, cherries, wine. Bittersweet chocolate at darker roast. Nice crema for single origin espresso.  City - Full City - Vienna - French Roast
 
Mexico Mountain Water Decaf  Mountain water processed decaf from the Chiapas region in Mexico. Chiapas borders Huehuetenango in Guatemala, and the coffee favors the fruited notes like its Guatemalan cousin. Clean, well balanced cup with a nutty, chocolate aroma,  balanced acidity and a surprisingly full body for a decaf. Fruit notes favor a light orange and tangerine citrus, with light milk chocolate notes coming out and lingering in the finish.
 
The  Mountain Water Decaf process uses clear, pure water from the glaciers and highest mountain in Mexico. In the decaffeination process, the green coffee beans are immersed in water in order to extract the caffeine. The water constrains the soluble components of the coffee beans which hold the elements of the individual coffee's flavor, so that during the extraction of the caffeine the beans maintain their original taste components. The resulting coffee is 99.9 caffeine free. Once decaffeination is finished the beans are dried and packed. We are finding the coffee decaffeinated in this ultra modern Mexican plant to be the purest and cleanest we have found. In addition, the process can be performed on relatively small lots of coffee - this means top quality coffees, rather than volume coffees - can be decaffeinated. Top coffees decaffeinated this way are a real break-through. When quality coffees are selected and processed in this manner it is a winning formula. We continue to be impressed by the quality of the decafs coming out of this facility.

The Powerbean solvent-free flavor system uses no chemical solvents or carriers. The  flavoring ingredients are added to the beans at 100% concentration, no propylene glycol is added- and, through a revolutionary, proprietary technology, are infused directly into the beans, thus creating the Powerbean. These Powerbeans are then added to roasted coffee at the same 3% use level to make the finished flavored coffee. The result is the best-tasting flavored coffee you can buy, with no bitter chemical aftertaste.
